A premium Colorado Native Foods fire grilled chicken breast is skewered with apricots, figs, dates, and red onions served with an Artichoke-Lemon Sauce, Lentil Rice and Moroccan Ratatouille.
Chicken and Fruit KabobA recipe inspired by of Casablanca, the heart of Morocco where wanderers can buy kabobs and fresh fruit cooked on the spot off wheeled carts. Figs and dates add an all-natural sweetness to these skewers and blend perfectly with the chicken and the bite of the red onion. Chicken is a great source of lean protein and the amount of saturated fat and cholesterol found in chicken is much lower than in red meat. Making it an excellent addition to a balanced diet. The American Heart Association has advised consuming chicken or fish instead of red meat for a lowered risk of cholesterol and subsequent heart disease development. Figs are a good source of potassium, a mineral that helps to control blood pressure and a good source of dietary fiber which has a positive effect on weight management.
Artichoke-Lemon Sauce – A healthy zesty artichoke-lemon butter sauce. Artichokes are a superfood in every sense of the word. The phytonutrients in artichokes provide potent antioxidant benefits, and a 2006 study conducted by the US Department of Agriculture and published in the American Journal of Clinical Nutrition showed that artichokes provide greater antioxidant benefits per serving than many other foods traditionally considered to be antioxidant-rich such as dark chocolate, blueberries and red wine. They also lower cholesterol, improve liver function and prevent cancer and protect against free radicals.
Lebanese Lentil Rice - our healthy and delicious Lebanese rice - a mixture of red lentils, rice and orzo prepared in our homemade vegetable stock. Nutrient rich lentils contain the highest amount of protein originating from any plant. They are a great source of dietary fiber and also have a low amount of calories.  Dietary fiber found food such as lentils helps in controlling blood sugar levels. Dietary fiber slows down the rate at which food is absorbed by the blood and as a result maintains a consistent blood sugar level.
Moroccan ratatouille - what distinguishes our ratatouille from the traditional French ratatouille is dates and apricots join yellow squash and red bell peppers. Yellow squash is high in manganese, a mineral which helps the body process fats, carbohydrates, and glucose.

Stove Top: (Preferred Method) Bring a pot of water to a boil. Immerse the chicken kabob pouch into gently boiling water for about 10 minutes. Add side dish pouches and boil for an additional 3 minutes. Finally, add the sauce pouch and cook all components for an additional 2 minutes. 

Microwave: Pierce a small hole in each pouch for venting. Place chicken kabob pouch on a microwave safe dish and heat on high for 1 minute, add side dish and sauce pouches and heat on high for an additional 1.5 minutes.

In the event your meal is not fully reheated after removal from the pouches, you may continue reheating in a microwave on a microwave safe dish until done - which should be no more than another minute or two. An internal temperature of 168° F must be reached. Appliances vary, adjust accordingly.

Please note: For items without sauces or gravy, cut a hole in corner of pouch and drain excess liquid before plating.

Caution: Pouches and contents will be very hot.
