Moroccan-Style Chicken Kabob with Lemon-Caper Picatta Sauce, Risotto and Brussels Sprouts

A premium Colorado Native Foods fire grilled chicken breast is skewered with apricots, figs, dates, and red onions served with a picatta sauce made with our homemade chicken stock, lemon, capers and seasoning and provides a lively, delicate finish. Accompanied by risotto with herbs de Provence and roasted Brussels sprouts.
Charbroiled Chicken Breast - Our chicken is all-natural, locally sourced and 100% antibiotic, added hormone and steroid free and raised on family farms in cage-free environments.  We believe this humane treatment, and respect for our environment comes through in superior flavor.  Chicken is a great source of lean protein and the amount of saturated fat and cholesterol found in chicken is much lower than in red meat. Making it an excellent addition to a balanced diet. The American Heart Association has advised consuming chicken or fish instead of red meat for a lowered risk of cholesterol and subsequent heart disease development. Figs are a good source of potassium, a mineral that helps to control blood pressure and a good source of dietary fiber which has a positive effect on weight management.
Lemon-Caper Picatta Sauce – Our picatta sauce is made with our homemade chicken stock, lemon, capers and seasoning and provides a lively, light, delicate finish. Capers, pickled flower buds, are an all-natural and delicious way to bring flavor to a meal without adding many calories and are an excellent source of fiber and vitamin K.
Risotto – Made with Arborio rice and our home-made vegetable stock this dish is filled with flavor and nutrition. Arborio Rice is high in muscle building protein and packed in vitamins and minerals.  Arborio rice will give you about 12% of your daily dose of vitamins Vitamin A and C. Its Vitamin C content helps protect your teeth and bones. A full cup of Arborio rice, fulfills about 45% of your daily requirement of essential nutrients.
Roasted Brussels Sprouts – Oven roasted in olive oil, seasoned with sea salt and preserved with lemon. Simple, delicious and all natural. Brussels sprouts offer cancer prevention glucosinolates: glucoraphanin, glucobrassicin, sinigrin and gluconasturtiian. Brussels sprouts offer these cancer-preventive components in a unique combination.

Lemon-Caper Picatta Chicken and Fruit Kabobs

Stove Top: (Preferred Method) Bring a pot of water to a boil. Immerse the chicken kabob pouch into gently boiling water for about 10 minutes. Add side dish pouches and boil for an additional 3 minutes. Finally, add the sauce pouch and cook all components for an additional 2 minutes. 

Microwave: Pierce a small hole in each pouch for venting. Place chicken kabob pouch on a microwave safe dish and heat on high for 1 minute, add side dish and sauce pouches and heat on high for an additional 1.5 minutes.

In the event your meal is not fully reheated after removal from the pouches, you may continue reheating in a microwave on a microwave safe dish until done - which should be no more than another minute or two. An internal temperature of 168° F must be reached. Appliances vary, adjust accordingly.

Please note: For items without sauces or gravy, cut a hole in corner of pouch and drain excess liquid before plating.

Caution: Pouches and contents will be very hot.
