Chargrilled Pork Tenderloin Medallions – Seared to perfection. Pork tenderloin is certified with the American Heart Association’s “Heart Check” mark, indicating it qualifies as an extra-lean, heart-healthy protein. Ounce for ounce, pork tenderloin is as lean as a skinless chicken breast. A 3-ounce portion of pork tenderloin contains less than 3 grams of fat and 120 calories. Pork tenderloin is an excellent source of protein, thiamine, vitamin B6, phosphorus and niacin.

Pecorino Romano Cream Sauce – Pecorino is one Italy’s oldest cheeses, a hard salty cheese that is combined with Parmesan and grated into our cream sauce.  A six- year study found that Pecorino Romano cheese is not only tasty, but is good for you too. Pecorino Romano cheese, made from sheep's milk, is high in healthy fats essential to a nutritious diet. Pecorino cheese contains high amounts of omega 3 fatty acids and conjugated linoleic acid (CLA), unsaturated fatty acids naturally found in certain food groups that have proven to be very healthy.  Omega 3’s are beneficial in preventing cardiovascular diseases, improving immune function, reducing inflammation, improving vision and learning, and slowing down mental deterioration. Antioxidant and cancer-fighting properties are among the health benefits attributed to CLA, which has also shown to prevent arteriosclerosis, is beneficial in improving bone formation and reducing body fat, suppressing diabetes, preserving muscle tissue and stimulating immune function.  Usually, Pecorino Romano cheese has 3-5 times higher CLA compared to cow’s cheeses. Additionally, Pecorino contains a good amount of calcium, potassium, and magnesium and is a good source of protein.

Za'atar Oven Fries - Sumac, Sesame Seeds, Sea Salt - Eastern Mediterranean za’atar is an intensely aromatic and ancient spice blend and condiment. The mixture is traditionally made with dried herbs such as marjoram or thyme (the Arabic word za’atar, pronounced ZAH-tahr, also means “thyme”), we make ours with sumac for a vibrant twist. The sumac brightens everything up with citrus tones, but it's also earthy, it makes our fries pop and it goes extremely well with the nuttiness of sesame seeds. Our fries come out of the oven so are a healthy way to enjoy a favorite comfort food.  When you take away the extra fat and deep frying, potato is an exceptionally healthful low calorie, high fiber food that offers significant protection against cardiovascular disease and cancer and are very good source of vitamin B6 and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid. Potatoes also contain a variety of phytonutrients that have antioxidant activity. Among these important health-promoting compounds are carotenoids, flavonoids, and caffeic acid, as well as unique tuber storage proteins, such as patatin, which exhibit activity against free radicals.

Braised Cannellini Beans – Swiss chard adds bright color to tender cannellini beans and complements the beans nutty flavor. Braised in our home-made vegetable stock this side dish balances natural deliciousness and healthy goodness.  Cannellini beans lead the pack of low glycemic beans. They help to control blood sugar by metabolizing slowly, and provide steady energy for hours following their consumption. This in turn helps stave off cravings for sugary foods and controls mood swings. Cannellini beans also have a detoxifying effect on the body as they are high in molybdenum which is a trace element by stimulating the action of detoxifying enzymes like sulfite oxidase and aldehyde. Stove Top: (Preferred Method) Bring a pot of water to a boil. Immerse the pork tenderloin pouch into gently boiling water for about 10 minutes. Add side dish pouches and boil for an additional 3 minutes. Finally, add the sauce pouch and cook all components for an additional 2 minutes. 

Microwave: Pierce a small hole in each pouch for venting. Place the pork tenderloin pouch on a microwave safe dish and heat on high for 1 minute, add side dish and sauce pouches and heat on high for an additional 1.5 minutes.

In the event your meal is not fully reheated after removal from the pouches, you may continue reheating in a microwave on a microwave safe dish until done - which should be no more than another minute or two. An internal temperature of 158° F must be reached. Appliances vary, adjust accordingly.

 

Please note: For items without sauces or gravy, cut a hole in corner of pouch and drain excess liquid before plating.

Caution: Pouches and contents will be very hot.
