Steamed Cod - Steamed cod marinated in lemon served with a served with a Spanish romesco roasted red pepper sauce and accompanied by, Orzo with Pecorino Romano Cream Sauce with Shaved Broccoli and Mushrooms and Braised Cannellinni Beans.  A taste of summer from the shores of the Meditation.

Cod – All-natural delicious treat from the sea.  Simple ingredients keep this delicate fish healthy and bring out  the best of the cod filet. Lemon, olive oil, garlic, basil, sea salt, black pepper.  That’s it and that’s enough for a great piece of fish! Cod is an excellent source of vitamin B12, selenium, phosphorus and protein. Romesco Sauce - a Spanish romesco roasted red pepper sauce.  Traditionally served with fish this Catalan mixture of roasted red peppers and almonds goes perfectly with poultry as well and adds a bright splash of color to your plate. Made with red bell peppers that provide plenty of vitamin C to power up your immune system. Red bell peppers contain several phytochemicals and carotenoids, particularly beta-carotene, which lavish you with antioxidant and anti-inflammatory benefits. The capsaicin in bell peppers reduces ‘bad’ cholesterol, controls diabetes, brings relief from pain and eases inflammation. The sulfur content in bell peppers allows them play a protective role in certain types of cancers and bells are a good source of Vitamin E, which is known to play a key role in keeping skin and hair looking youthful. Bell peppers also contain vitamin B6, which is essential for the health of the nervous system and helps renew cells. Also in our recipe is apple cider vinegar which Improves insulin sensitivity during a high-carb meal by 19-34% and significantly lowers blood glucose and insulin responses.  Given that vinegar lowers blood sugar and insulin levels, it makes sense that it could help you lose weight. Several human studies suggest that vinegar can increase satiety, help you eat fewer calories and even lead to actual pounds lost on the scale. Vinegar along with high-carb meals can increase feelings of fullness and make people eat fewer calories for the rest of the day.
 
Orzo with Pecorino Romano Cream Sauce with Shaved Broccoli and Mushrooms – A six- year study found that Pecorino Romano cheese is not only tasty, but is good for you too. Pecorino Romano cheese, made from sheep's milk, is high in healthy fats essential to a nutritious diet. Pecorino cheese contains high amounts of omega 3 fatty acids and conjugated linoleic acid (CLA), unsaturated fatty acids naturally found in certain food groups that have proven to be very healthy.  Omega 3’s are beneficial in preventing cardiovascular diseases, improving immune function, reducing inflammation, improving vision and learning, and slowing down mental deterioration. Braised Cannellini Beans – Swiss chard adds bright color to tender cannellini beans and complements the beans nutty flavor. Braised in our home-made vegetable stock this side dish balances natural deliciousness and healthy goodness.  Cannellini beans lead the pack of low-glycemic beans. They help to control blood sugar by metabolizing slowly and provide steady energy for hours following their consumption. This in turn helps stave off cravings for sugary foods and controls mood swings. Stove Top: (Preferred Method) Bring a pot of water to a boil. Immerse cod pouch into gently boiling water for about 7 minutes. Add side dishes and boil for an additional 3 minutes. Finally, add the sauce and cook all components for an additional 2 minutes. 

Microwave: Pierce a small hole in pouches for venting. Place cod pouch on a microwave safe dish and heat on high for 1 minute, add side dish and sauce pouches and heat on high for an additional 1.5 minutes.

In the event your meal is not fully reheated after removal from the pouches, you may continue reheating in a microwave on a microwave safe dish until done - which should be no more than another minute or two. An internal temperature of 158F must be reached. Appliances vary, adjust accordingly.

Please note: For items without sauces or gravy, cut a hole in corner of pouch and drain excess liquid before plating.

Caution: Pouches and contents will be very hot.
